Roasts can be 3-4 lbs, or 5-6 lbs if you have a large family or enjoy leftovers
Steaks are typically cut 1" thick
Ground beef comes in 1 lb or 2lb packages
Stew and Stir fry comes in 1 lb packages
Any cuts not selected will be ground
Order & Delivery Schedule:
From the time we deliver an animal to the butcher, the harvest, cutting, and wrapping process takes about four weeks If you're in Edmonton and need delivery, we can co-ordinate it with one of our scheduled trips, which can happen either the week of the butcher pickup or a few weeks later.
For example, if you want your beef ready by early March, the animal must be delivered to the butcher by the first week of February (subject to butcher availability). We typically schedule deliveries toward the end of each month, so to align with your timing, a delivery at the end of February would probably work the best, and that would require the animal being booked in at the butcher for the second week of January.
Ordering early increases your chances of securing your preferred delivery time. For fall delivery, we recommend ordering by July, as fall spots fill up quickly. Our butcher is unavailable from mid-October through mid-December because of hunting season, and waiting too long could lead to limited options and wait times of up to 2 months.

Sausage, Stew, and Stir Fry
Selecting extras like stew meat, stir-fry strips, minute steaks, or sausages will reduce the amount of traditional roasts, steaks, and ground beef in your order. Stew meat, stir-fry, and minute steaks are not true cuts — they’re made from roasts and steaks (sub-primals), while sausages require ground beef to be set aside for preparation.
Depending on your selections, this can significantly impact your final yield of traditional cuts. If you’re unsure how your choices might affect your order, don’t hesitate to reach out—we’re happy to help you make the best decision for your needs!
If you are interested in one of these additional cuts, but the minimum order batch is too much, you can check to see if the we already has these available from a previous butcher. The smaller quantities of these cuts will be sold at the individual cut price as they were butchered from a separate animal.

Organ meats (heart, liver, kidneys, tongue, and oxtail) are an additional purchase since these cuts are not included in the beef carcass hanging weight;
